How to prepare food safely at Christmas

The Victorian government’s Food Safety website has issued helpful information for food safety in time for the festive season.

Their top hygiene tip is to wash your hands for 30 seconds in warm, soapy water and dry them with a towel.

If making eggnog, ensure you clean the egg shell thoroughly, as any bacteria on the shell can contaminate the egg inside.

Stuffed roasts should be cooked until the juices run clear and poultry must be cooked until it is white with no pink areas.

Temperature is another key to preventing food poisoning. The optimum temperature for the fridge is below 5°C.

The freezer should be between -15° to -18°.
